To summarize the 2021 draft, the Giants picked 13 pitchers, 3 outfielder/pitchers, 1 outfielder, 1 1st baseman/pitcher, 1 3rd baseman/pitcher and 1 shortstop/pitcher.
Four of the 20 picks were from high school 1 from a junior college and 15 from 4 year colleges.

I would guess that the Giants will be signing a few non drafted free agents in the coming weeks. They didn't pick any catchers in the draft and only 3 infielders. Two of those infielders were high school picks at the end of the draft so its doubtful that they will sign. The other infielder, Hunter Dula, the 18th round pick, is listed as a pitcher first. Not sure what position he will play. Now, with the minor league system reorganized, maybe they don't pick up any NDFAs. As of about 5 days ago, ACL Black had 3 catchers, 6 infielders and 5 outfielders on the roster. ACL Orange has 5 catchers, 6 infielders and 5 outfielders on the roster. So maybe the org feels good about those guys and doesn't go after anyone else.

I’d be willing to be a good sum of money that the FO has identified a handful of guys they want to sign but were waiting to make sure they went undrafted. Expect some moves this week.

I know that there was a cap on previous years, including last year. I doubt its changed but that would be a big loophole for teams to get around the draft caps (of course, I don't know how many teams would let picks escape the draft completely).

The 2019 draft was 40 rounds and the Giants signed another 2 NDFAs that year. They also failed to sign 11 of their draftees, so the total players that they picked up that year was 31. While short-season A ball has been eliminated, the rosters for AAA, AA, high A and A ball have all been increased and there are still two "rookie" league teams (just with a different designation), so it may be safe to say that the Giants will target about 25 to 30 guys total to sign from this year's draft.
I am guessing that the Giants sign somewhere between 15 to 18 of their draft picks. That means that the org could pick up another 10 to 15 NDFAs. Last year they signed 7 NDFAs after drafting and signing 7 players in the 2020 draft. That was with no minor league season going on.
