Whole Wheat Pancakes (that actually taste good) Fifteen Spatulas

worked great.........used cider vinegar, less baking powder and soda, fluffy, tasty...........

put a lil extra egg in......

used a muscle milk shake for some extra protein, life is good
i see you found your answer. It probably was the whole wheat flour and extra egg. "Baking" is a science and if you screw with the ingredients and vary too much from the ingredient list you mess up what is supposed to happen. so in your case you need to find a recipe that has what you want.

i don't know why you would add an extra egg, just fry or scramble the egg and eat it separate if you want extra protein.

My child has a gluten and egg allergies so we have to get creative.

Some of the better gluten free mixes are potato based so you end up with a little bit denser pancake. I substitute applesauce for eggs and add cooking oil. If you put in warm butter you get close to not having to add water to the batter.

You figure out how much of what...

Mix the drys, add yolks-n-wets and whip up them egg whites til stiff...fold that in w/ the rest. Pour, brown and enjoy w/ real maple syrup.

Wheat germ and cottage cheese pancakes are amazing. My grandma made them for me for years and my bro got the recipe and started making them a few years ago. I've made them a couple times. Truly amazing unique pancake recipe.

Interesting. I've never heard of anything like that before. What is the texture/flavor like?

It can depend on how cooked they are. Airy, but dense at the same time and moist. Light, but filling. Wheat germ and cottage cheese are the dominate flavors. The rest is flour, milk, oil, sugar, baking powder, and salt.
