I take 3 pancakes, load them up with real live butter and then dump a shitload of syrup on them. It's orgasmic.

I'll make pancakes at home from time to time but am no great fan of them.
When I eat breakfast out, I see people order them all the time and wonder WTF.
There are way better things out there than some bland pancake.

There are way better things out there than some bland pancake.

Same here. Truth is I have pancakes once, maybe twice a year at most. Same goes for waffles.

I'd much rather have some eggs, hash browns and bacon with some rye toast on the side or a nice omelet.

That's interesting. I haven't tried that before. I kind of like syrup too much to want to ever go off of the beaten path though.

I don't know if it's because I grew up only eating the fake type of syrup but I've never been able to enjoy the real stuff as much as something like Aunt Jemima.

i have my pancake mix memorized, i make it most every weekend for the kids and wife. (oh and i usually double this for my family of 5, but have it memorized at the smaller portion)

1c AP flour
1t salt
1t baking powder
1/2t baking soda
2T Sugar (I will often times use Honey instead)
3/4c 2% milk
2T vinegar (can also just use 3/4c buttermilk instead of adding vinegar)
1 egg
2T melted butter

batter is pretty thick. really good to add blueberries or chocolate chips.

most pancakes are.
i usually rely on the syrup for most of the flavor.
however, with the above, I would;
  • go with 1 whole egg instead of just egg whites
  • double the vanilla extract or more
  • ditch the splenda and go with a half cup of sugar.
  • if you like your pancakes to rise higher, double the baking powder.

now that you almost have a cake, it should give you something you can taste. :nod:

Good call on the baking powder, they were good, but flat like crepes, still pretty thin, but better, think its cause i used the egg whites, and more than i should for extra protein, but hey it works, this is better

sounds decent, io like to add more egg, for some extra protein

still getting flat pancakes, i tried upping baking powder, adding baking soda, adding lemon juice

If it's more than 6 months old, it's out of date and wont work.
That may be it.

Buttermilk should react with the baking powder and get a better rise.
I'd ditch the baking soda for the pancakes.

That's strange. Should be working.
Did you check the date on the can to make sure?
I don't let my batter sit for long periods, but i do let it sit for a few minutes before I start making them. Maybe increase the baking powder even more, couldn't hurt.
