Starbuck (should have been more than a one hit wonder; they had some serious players)
Weather Report (ok, might sound strange saying they were under-rated, but most of their fame came from one song; they were so much bigger than that one song (Birdland) which was hardly representative of their overall sound)

to echo the cat asking the question, that's a loaded topic. I'd say pixies, I only discovered them in my past 8 years or so, though probably because they were popular enough to get a mention.
