Continuing off topic, this point has always baffled me. In fact, your post spurred me to google card counting. I don't gamble and have never been to a casino but I've heard of this for years. As far as I can tell, card counters remember a tally of the value of cards played and thus removed from the chance of being drawn again. They use this information to inform their current bets.

Jesus, are you supposed to erase them from your memory and make bets it inopportune times? Among the behaviors of card counters they list:
I ask again, what else would you do? I can see curbing table hopping as problematic in itself but it seems crazy to require a bettor to forget what he's seen.
- Large buy ins
- Large bet sizes
- Dramatic bet variation especially with larger bets being placed only at the end of a shoe
- Playing only a small number of hands during a shoe
- Refusal to play rated
- Table hopping
- Playing multiple hands
What am I missing?

It is largely a myth that casinos will eject you for card counting.
First off, card counting is really hard. It requires a mathematical and disciplined mind that doesn't get distracted easily because the house is constantly trying to distract you. Secondly, the vast majority of people who try to card count fail miserably. A few succeed but it isn't what people think it is.
IIRC, if you play blackjack by the book, you will win about 49% of the time. If you card count and play by the book you will win 51% of the time or so. Needless to say the house doesn't much care about you based on those odds.
Where the house DOES care about you is when you are part of a team. You have 4 or 5 guys playing minimum bet poker who wait until the deck is really juicy and call the big player in to max bet the game. That's where the house can get really hit. They will definitely boot you for that.
