Fried Egg & Smoked Salmon Breakfast Sandwich

Breakfast Sandwich with Fried Eggs and Smoked Salmon
Recipe type: Breakfast
Prep time: 10 mins Total time: 10 mins
Serves: 2

A simple breakfast that is a great way to start the day. A winning combination. Can’t go wrong with smoked salmon, eggs, pesto, and cucumber.
Ingredients
4 slices bread (gluten free bread for gluten free version)
2-4 tablespoons pesto (vegan pesto for dairy free version)
several slices smoked salmon
1 small cucumber, thinly sliced
2 fried eggs
handful salad mix
½ avocado, thinly sliced (optional)

Instructions
Spread pesto on each slice of bread. On two pieces of bread layer salad mix, cucumber, smoked salmon, avocado and one fried egg on each. Top with other two slices of bread.
Makes 2 sandwiches

Never seen the boomstick. Never gotten to go to a Rangers game. I live south of Houston. Was supposed to go in 94 but we all know what happened there....

You gotta get up here. hit a June afternoon game where you have your choice of outfield seats and sit out there drinking beer and eating 2 foot chilidogs!

Apparently, at Diamondback games you can get the macaroni hot dog but it also has Fritos on top. Sounds good to me.

It's awesome. You can get chili and cheese, or add onions or sauerkraut, jalapenos...all sorts of ball park food.

Just ate an awesome chicken dinner.

3 to 5 lb fryer or game hen

Preheat oven to 375.
Season with salt and pepper and brown all sides in oil in a large dutch oven. The ceramic Lodge ones are perfect. Remove and drain oil. Deglaze with 3 cups of milk. Add 10 cloves of garlic unshelled. One good handful of fresh sage and the zest from two lemons, salt and pepper. Return chicken to pan. Cover and put in oven for 1 hour. Remove lid and continue cooking another half hour or so, or until it registers a safe 165 temp.

Pull chicken apart, serve with the juice ladled over it and some mashed potatoes and veggie of your choice.
