I don't have a machine, I just used office clips and clipped the ziplocks to the side of the pot.
I have only done sous vide cooking to re-heat meat, specifically prime rib.
Why wouldn't you try it?That's a pretty good idea. Warm it up without overcooking it. Great idea.
I'm not a sous vide freak, but I do think it allows you to do some unique things. It's not a be-all-end-all, but it's a pretty cool tool to have in the kitchen.
Not that I'd ever do it, but with sous vide, you can safely serve medium rare chicken.

Not sure if you have heard of this guy, Steven Raichlen's Project Smoke , but he comes up with some good shit. I watched one of his shows, another outstanding PBS show, and was hooked.thanks buddy
