What cut of meat do you go with, would chuck roast work?
Chuck roast is fine. I let mine slow cook 6-7 hours. You don't really taste the beer just the French onion/beef au just.
Great on croissant, ciabatta roll, brioche, whatever.
I do turn it a few times if I'm cooking a big one, just to make sure I'm getting both sides but not critical.
Down side: house smells so yummy, it's hard to wait.
