cooked some mahi^2 on the grill last night. Used some blackening seasoning and cooked it on planks. It came out really good. Threw together some mango salsa that could have used more mango and some coconut rice. Tasty meal right there.

Used my new electric smoker to make a roast yesterday. Tried out a new rub mix, poured in some yuengling, thousand islands and lemonade when I wrapped it up. Turned out good but not enough smoke.

made a pot of bolognese pasta gravy over the weekend. Came out really good. I am very happy with it.

Made more venison backstrap street tacos last night. Used garlic, lime & orange juice to marinate it for a half hour. Seared them really well in the skillet.

Used a can of Rotel habaneros/chilies, chopped white onion, shredded pepperjack cheese & Valentina hot sauce as toppers.

It was damn delicious! The orange juice had enough acidity & sodium in it to get a good penetration into the meat. Probably should have waited a full hour but it still had plenty of taste. Would have helped if I cut the steaks into thinner strips but it still turned out really good.

about six racks of baby backs
and some welfare burnt ends made of some chuck roasts I got on sale this week..

I've preferred chuck roast to brisket the past few years.
