From what I understand, the best places use ribeye for their cheesesteaks... Makes sense, ribeye has a great balance of meat/fat and fantastic flavor....

You can buy it pre shredded at a lot of places. Doubt they use ribeye for it though.

I use an electric razor to make sure my meat is properly shaved.

Yes, I think they use a whole loin and partially freeze it then slice it thin on a commercial spiral slicer..
not really easy to do at your house :nono:
