I'd have to go with Blazing Saddles, myself. First - it pokes racism with a pointy stick and that's a good thing. Second he said, "I made this movie for guys out wandering around at midnight with nothing better to do than see my movie. Who knew?"

So many great lines from, "Hey! Where da white women at?", to "Mongo like candy".

Blazing Saddles is my favorite by him BTW.
Young Frankenstein is a close second, the rest are all third.

One of my favorite lines.."I hired you guys to build a railroad, not dance around like a bunch of Kansas City faggots"..

But you're right about poking fun at racism. That movie showed just how ignorant racism, or racists can be.
