Mexican food sans cilantro is not Mexican food.

It's like..Texican...or Mexifornian er' something? What do ya eat yer corn chips with?
Don't call it mexifornian. We put cilantro in e'rythang, bech! Even our fake mexies at Chipotle do it!

I don't think I'd know how to cook without onions.

if I'm eating a hamburger, it better have pickles AND onions on it, otherwise I'm not interested

Out the other night and they brought a cup of diced onions for my tacos. My kid asked if he could try them and started eating them raw with a fork. YUCK

I load up on onions, relish, sauerkraut and deli mustard whenever I have brats or hot links.

There's always a mixture of those condiments left over, and I scoop them up. Delicious.

I love hot sauce but Tabasco has a funny taste. Not a fan.

I need to get an indoor setup. My cilantro dies outside every year.
It doesn't tolerate humidity at all. It's hard to grow on the eastern side of the US. I've found the best way is to start seeds in mid august so by the time its ready to go into the ground there is less humidity. Might be hard for you depending on how early/late your frost is.
