Two different ways to look at: One, yes they didn't have as much success in Houston as they probably should have. But then, on the other side of the coin there's the fact they did all that with Matt Schaub at QB.
This past season I think we saw the limits in what our coaching staff could do. Fox and company are very good at taking bad to mediocre teams and making them competitive but he just isn't the type of guy to help you get over the top. He also did not mesh with what Elway has envisioned for this team in being a very aggressive style team on both the offensive and defensive side of the ball. Fox was good for us when we had Tebow at quarterback but this team wants more and that means taking some risks such as firing a coaching staff that went 12-4 and had just won 4 straight division titles. It is a huge risk for sure but one of asking the question what is more important...Being an above average team for years to come or taking a chance to form a team that can compete for Super Bowls? To me I would rather go for the Super Bowls.
Now looking at Kubiak as a coach. I think most coaches will tell you that their first time being a head coach usually ends in disaster. Not many first time head coaches seem to have much success. It is usually that 2nd time where they really hit the ground running. They have learned from their mistakes and won't be making the same rookie mistakes they did before. Throw in even with all that Kubiak still had decent success with the Texans. Heck his final few years their they were considered Super Bowl contenders. Not bad for a team lead by Matt Schaub. Anyway I am actually pretty darn happy with the coaching staff we have put together. They are all guys who have worked together in some fashion and all seem to have Bronco roots other than our DB's coach.
