Grilled chicken sandwich, with bacon fried on a griddle over the fire, on a pretzel bun. With a side of morels, fried in butter, over the fire. Or the late night Brats I cooked up when drunk. Those were good too. The sausage links, sausage patties, bacon, eggs and pancakes were good too. (Campfire griddles are where it's at.)

Mahi. It was swimming yesterday morning and grilling last night. It was outstanding.

Grilled about 15 pounds of boneless, skinless thighs Saturday for a little get together.

I take a pretty simple route, I'll brine it for a few hours and smoke it @ 250 til it reaches an internal around 180 degrees. If you like a crispier skin you'll want to go hotter for a shorter amount of time. My wife doesn't eat meat off of a bone so I have to make her boneless, skinless chicken breast. In that case I brine it overnight, smoke it just like bone-in but finish it in a covered foil pan with some butter and whichever spices she decides she wants. It's not all that easy to smoke boneless, skinless chicken without it coming out dry as ass. The longer brine time helps.

It's not all that easy to smoke boneless, skinless chicken without it coming out dry as ass. The longer brine time helps.

I'll have to remember that about brine...the main reason I never did a chicken, was the fear that it would dry out so quickly that it would be a wasted effort

I had smoked boneless chicken thighs in the freezer that I made the weekend before. Wanted chicken salad and that was the only chicken I had so I used it.

:omg: It was delicious! Don't know if I'll ever have regular chicken salad again.
