I do think picking only older players is a huge mistake, though. The game is hyper competitive right now

For the most part yes but ask any current defensive player would they rather tackle Earl Campbell in his prime or any current day running back.
It was like trying to tackle a fast tractor.

I think in this exercise, it's only fair to assume every player would have grown up and played under the same circumstances. I mean you can't just take an older player (and his leather helmet) and plop him into today's game.
