I've got to call foul on the U2 compilation album. As noted, there are exceptions for certain compilations when they far exceed the original albums or define the artist. But that album does neither.

I will probably use apple cider instead of apple juice though, is there a difference in the result that you are aware of?

Cider helps to break down collagen which is why people use it a lot when spraying Ribs, and Butts. But because it has a vinegar taste I would be hesitant to use in a Brine

Again, I'm being judgy, but the songs on the U2 greatest hits already had large audiences from the their originating albums. I'd argue the Changes one album reached a larger audience than any of the originating albums so that would be ok.
