This is a great marinade for Leg of lamb or pork loins. I use this frequently for grilling leg of lamb. It's outstanding!


2 Tablespooons chopped fresh ginger
4 cloves of garlic, chopped
1 Bunch scallions, finely chopped
3/4 cup soy sauce
3/4 sake, rice wine, or sherry
1/2 cup asian sesame oil
1 tablespoon sugar
1/2 teaspoon black pepper


Put the garlic, ginger, and scallions in a food processor and process to mix. Add the soy,sake, sugar, sesame oil, and pepper and mix again. Pour about 1/3 of this into non-reactive baking dish that is just large enough for the meat. then lay the meat on top and pour the remaining marinade over the top of your meat. Let marinade for at least 4 hours, but it's best if done over night. Rotate the meat once or twice to insure even marinating.

2 limes(juiced)
1 jalapeno(haberno for more heat)
1 cup cilantro leaves
2fresh thyme leaves
3/4 cup corn oil
1 1/2 tablespoon honey


puree together then marinade (mainly for beef)
there should be enough so that after cooking you can drizzle the rest
over you cooked meat

flat iron steaks(fajitas),sirloins a few times.....goes good with all i would think

Classic Stromboli: makes 4

1 lb of bakery fresh pizza dough
1/4 cup flour
1/2 cup skim riccota cheese
peperoni slices 10-12 or as preferred
1/2 lb ground beef
1 cup cooked sausage crumbles ( i use jimmy dean)
1 cup shredded italian cheese blend divided
1/2 cup diced onions
1/2 cup diced peppers
1/4 cup fresh basil leaves coursely chopped
pizza sauce or marinara sause whichever you prefer ( i use a marinara sauce)

if the dough has been refridgered leave it out and let it stand one hour at room temp.. while dough is sitting brown and drain ground beef, set aside.
Preheat Oven to 400 degrees

divide dough in half and turn onto a lightly floured surface and roll into 6 x 12 inch rectangles(to desired thinness)
spread 1/4 cup ricotta cheese leaving a 1 inch border... top the ricotta with drained ground beef,pepperoni, sausage onion and peppers(to taste) shredded cheese and chopped basil
starting along the side roll dough tightly around filling and pinch the edges to seal and place seam side down on greased baking sheet ( i use pam's olive oil spray)
Bake 18-20 mins or until brown or throughly heated

I pour room temp sauce over the top of the stromboli right out of the oven and add more shredded mozzarella to the top and let it melt ..

This sounds like it woould be good on chicken.
