Horrible picture, sorry... Channeled my inner German & made this over the weekend:

Cordon Bleu Schnitzel with mushroom gravy, served with kartoffelpuffer (little "German pancakes" as my gma calls them) & caesar salad.

Schnitzel:
*Pork chops butterflied & pounded <1/4" thin & seasoned with S&P.
*Wrap one slice of ham around a chunk slice of swiss cheese and place in center of the pork. Fold/wrap butterfly to enclose & secure with baking twine.
*Coat outside or meat with flour, then beaten eggs, then bread crumbs
*Fry in skillet until golden brown turning once

Kartoffelpuffer:
*Grate 2 russet potatoes
*Grate 1 medium white onion
*Mix potatoes & onion (drain & dry as necessary).
*Mix in 1 egg, 2-3tbsp of flour, & 2 tbsp of sour cream. Mix well.
*Roll mixture into balls and drop them 1-3 at a time into hot oil. Flatten into pancakes with spatula.
*Fry until golden brown. Basically like making little servings of hashbrowns.


Nothin special about the gravy or salad. Both were store bought "packets". Made as directed.

That's an overhead view of muh smashed open baked tater. Got cheese, sour cream and this tater topping shit (has garlic, bacon & other shit in it) that my wife buys.

What's yer yolk mixture?
My wife typically makes those but I believe she just uses the egg, mayo, a little mustard, relish and salt & pepper. They were good but ended up a little runny this time.

Initially, she does them toward the runny side so she can pipe them into the egg halves quicker/easier. They usually firm up in the fridge but these didn't really cooperate.
