yeast issues

well i brewed my fat tire clone on saturday, used the wyeast "slap pack", like i usually do (i dont know why, i always get frustrated as hell trying to tell if the inner pouch has broken or not)...well the inner pouch broke, but the packet never swelled up like it should...pitched saturday night, at about 8pm or so...as of 8am today, still nothing going on with the fermentation...not too worried about it yet, as i've had batches before that it took 2-3 days before seeing any activity...so hopefully it'll get going here soon.

if it never does get going, would i be alright to just get a new thing of yeast, and dump it in or is there something else i need to do before putting new yeast in?

No idea. Maybe try a wild yeast fermentation? I bet if you leave it open on your porch or something, with like a fishing net over it to avoid bugs, you'll pick up some wild yeast. Who knows how that'll turn out, but maybe it'll be fun.

it looks like fermentation began over night..whew...i figured it was just a slow start cause the yeast pack was sitting around for a while

do you brew forkem? ive read about doing open fermentations, but never been ballsy enough to give it a go....maybe some time down the road ill give it a try

Think I might try this some time too. Heard that a Saison beer is the way to go with this method.
