full spares? what did you rub them with?
I smoke them for four hours to get the nice bark I'm looking for then I either wrap them in foil and cook them for another couple to three hours or I cut the racks up and throw them on the BBQ to finish them up.
Why're they all cut up though?
There's no substitute for real smoke. Ribs only take about 4 hours with prep and are about the best use of wood chips ever devised.So, with this batch and what I was looking to do was, smoke them and then put them on a bbq an serve them from there. That is a pic of the end product and everyone was raving how good the food was.
It was a work related event and smoked 12 racks of ribs. Cut them up into ribs and the rest was very tasty.
So is the plan is more ribs?

Very nice! I made a batch last weekend. My wife's going to use the last of the rub to make pulled pork tomorrow. She's brining the shoulders now.
