Most professional kitchens use Kosher salt... Why? You can feel it in your fingers and therefore can control the amount VERY easily

So you guys season the raw meat with salt and pepper before making patties? How much per say 2 1/2-3lbs of meat?
I love jalapeno burgers I grind up a few peepers and mix in with raw beef, make patties and top off with pepper jack cheese! ...Good chit man!
