If a team saw enough potential in 64 games to pick up the option year, I doubt they would cut a player regardless of their performance in 8 or so games.
The option year isn't for this season, but next season. Let's take RG3 as an example because he's an interesting case. The Redskins picked up his option for 2016. They now control his rights through 2016 because they exercised the option. If he returns to his rookie season, probowl form, the Redskins can keep him at 16 million dollars (the amount of money is based on the draft slot) next year. If he performs poorly they can decline the option after the season (it's only guaranteed for injury).
The Bengals get to make the same decision on Kirkpatrick after this year
