For Christmas we always have a different theme. One year it’s Italian or Southern BBQ etc...

But for Thanksgiving we do have turkey. And my wife makes the most incredible turkey gravy. I look more forward to that than seeing my kids!


I smoked a turkey this year for Thanksgiving.
I'll never do it any other way.

I make a Potato Casserole with Fresh Parmesan and Jarlsberg Cheese, with loads of diced Garlic, whipping cream fresh Thyme, Rosemary and Parsley. I guess that is my favorite. The Ole Ladies family will call to find out if I am making it and actually place orders.

Wet Brine Turkey 48hours before cook;



Wet Brine: 1 Cup White Sugar, 1 Cup Kosher Salt, ½ Cup Crushed Pepper Corns, I gallon Apple Juice, 2 Gallons Water, Two Oranges Squeezed and slices added to Brine. Heat water and stir to dissolve all salts and sugar, Let cool, add Apple Juice, Pepper corns, and Orange slices to Brine, add water and apple juice. Place cooled liquid in large cooler put in Bird breast side down fill with ice. Let stay in ice brine for 24 hrs.



Dry Brine and Herb Butter Rub: Make this same day you wet brine leave over night let herbs marry.



Herb Butter: Two Sticks unsalted butter, 8 to 10 cloves garlic diced fine, 4 or 5 twigs of Fresh Rosemary, 5 or 6 twigs of fresh Thyme. Get butter to room temp add diced garlic, chop the hell out of rosemary and thyme add to butter with garlic blend all this together. You can leave in pyrex or Rubbermaid bowl.



Remove Turkey from wet brine dry thoroughly and spatchcock the bird, Gently, vey gently lift skin off breast do not break skin. My wife does this because I have large hands if you have average size hands it’s no issue. Take herd butter and get as much as you can on that breast meat, it’s okay if you have clumpy areas you can flatten or it will melt. Use as much as you can, what ever you don’t use rub on legs and skin. Sprinkle Bird with Kosher Salt leave in Fridge over night., next morning hit with some pepper.



1hour before cook remove bird leave covered on counter top. I smoke mine at 250 degrees with Pecan wood. Get a good coal base for heat then add two or three chunks Pecan ( in a pinch use Maple ). Once heavy white smoke clears put bird one smoker breast side up. Remember a spatchcocked bird will cook almost twice as fast an more evenly. Once you hit 165 to 170 in breast look to remove if you want to be ultra safe look for 180 in thigh. The wet Brine and Herb butter will still yield moist white meat.

I will try it.
I will probably use apple cider instead of apple juice though, is there a difference in the result that you are aware of?

If I could include one collection, it would be Live At The Old Quarter, Houston, Texas by Townes Van Zandt. It's a much better representation of him as an artist than any of his studio albums.
