I didn't know you were talking the full-monte. I was thinking a standard deli cold-cut.

In that case, grilled onions and some grilled peppers really add to the ambiance. And the roast beef needs to be medium at most. I usually cook my meats a more toward the strong medium side, but roast beef sandwiches deserve some serious pink.

Grilled flank steak with onions and peppers makes for the best sandwich I've ever had.
