I like to do a sort of egg frittata in the oven every now and then. I sauté bacon, drain fat and place chopped in the bottom of a casserole dish. Add sautéed leeks, spinach, cheeses of your choice and mushrooms if you like them in the casserole dish as well. Pour 6-8 eggs, scrambled over the top. Oven for 20-30 minutes at 350. Sprinkle more cheese, add some dollops of sour cream and sliced avocado on top.

Guacamole goes pretty well with eggs especially if you have veggies or pico de gallo with your eggs. Don't put it in with the eggs until they're almost done. You just want to warm it up a bit so it's not cold.

No pepper? I usually cook my eggs in bacon fat which tends to give it a salty flavor.

I eat sausage and egg sandwiches pretty much daily. Fry up the egg over easy with a little pepper on it and that's pretty much it.

Eggs benedict with actual Hollandaise sauce, and skip the ham for pork sausage patty or bacon. Real sauce should contain only egg yokes, splash of tobasco, fresh lemon juice, and salt blended.

eggs benedict is so good. I may get criticized for this, but I dig the packaged Hollandaise sauce. Sure the real stuff is great, but it is a bit of a pain to make. Most the packaged ones are pretty good if ya add a little lemon juice to em.
