Can't decide on a meal

Looks like some people have thrown in some good ideas... I'd definitely go pasta of sorts for your sitch. Just be sparse with things like red onions & garlic. Some women hate those things so less is more. Keep it basic! This is one of the first recipes that I ever made my wife back in college (really easy):

Chicken Bowtie Pasta w/ Creamy Walnut Sauce

  • 1lb bowtie pasta
  • 1 cup toasted walnuts
  • 2 cloves garlic
  • 1.5 cup half-n-half
  • 1 cup Parmesan cheese (shredded or flaked)
  • 1-2 tbsp Lemon Juice
  • Salt & Pepper to taste
Step 1) Cook pasta, drain
Step 2) Combine everything else into blender and blend that shit as fine as it will go. Food processor works too.
Step 3) Pour sauce over pasta and serve

Tear you up? You lactose intolerant?

If you want to lighten the half & half, you can use skim milk & butter together. It will make the sauce thin though.

Use more parmesan to thicken.

The beauty of that recipe is it works well with anything. I've done chicken, steak & seafood (shrimp & crab) with it and it all tastes amazing! One thing I would recommend is pan searing the chicken or steak to get that golden/dark crispiness. Looks & tastes better IMO.
