Oh I have you and @LongtimeRamsFan42 covered.
1 to 1/2 pounds of chopmeat about 80% lean. Not too lean you need some fat in there.
Dice an onion, add salt and pepper, place in a ceramic bowl covered in saran wrap and microwave for about a minute
Add the onion to the chopmeat along with 2 eggs, lots of parsley, some cracked red pepper, garlic powder, basil and oregano.
I use about 1 1/2 cups of breadcrumbs. Most people use more but I'm not making a prison meatloaf.
I mix that up into about 8 to 10 meatballs.
I use Canola oil but any vegetable oil will work.
I do not deep fry. I fry then with about an inch of oil in the pan and turn them every 3 minutes on a medium flame. I keep doing that until all sides looked cooked.
I then drop them and the sausages overnight in the sauce and let them soak.
