Looking for pull back from the bone is no way to tell if ribs are done. Have to do the bounce test or by feel. Pulling away happens when they start to dry out. Entirely possible to cook thick slabs without hardly any pullback when done.
To me, the biggest difference is that he's been "off the charts" against this Bama D.

I've had st louis slabs that stalled for a few hours more than once and ended up 6hr plus. That shit does happen. I'll use the texas crutch and wrap them sum bitches if I'm on a timetable. Impossible to stall when wrapped.I pulled them up in teh middle as well and didn't like the lack of bend.
