There is a guy that raises Wagyu here...Adams TN...that keeps telling me there is a shoulder cut that is just like brisket but only 3-4 lbs. I haven't done one. You've convinced me, I need to go get one withing the next couple of weeks. I will let you know what the cut is called.I at kidneys are weak because I was mis-diagnosed
I love properly smoked brisket. The problem is it's a humongous piece of meat and I don't have enough people to eat it.
Small piecces of it are not as good.....
@YankeeRebel , how small a piece of brisket can you smoke and come out right?
