What makes "good pizza" in you opinion?

Was talking to a buddy about how there is almost 0 good pizza around where we live. Too many corporate pizza chains around and I am not a fan. IMO good pizza is best without 437 toppings. Good crust, good sauce and good cheese is what makes good pizza to me. The best pizza Ive had was just that, cooked in a brick oven. I don't like pizza loaded with shit that IMO hides the flavor of the actual pizza. I like pepperoni, mushrooms and sausage on pizza sometimes but only because most pizza tastes like shit without. Sweet peppers, onions and sometimes pepperoni overpower everything. There is one place out in this small shit Southern Illinois town that has some of the best pizza I have ever eaten and the crust, sauce and cheese are the reason. Adding any more topping would ruin it if you ask me. I cant believe they aren't bigger than they are but apparently the owners aren't interested in growing the business any more than what it is now.

Must be home made. Crust not too thick, not too thin with a little crisp when you bite, sauce covers the entire crust, but not overly thick. Generous toppings including beef, sausage, fresh mushrooms, sliced olives, onions and green peppers. Mozzarella like your life depended on it.

My wife makes this for me. She uses a 24" pizza pan, three pounds of shredded Mozzarella and a pound and a half each of the beef and sausage. It is truly a glorious sight......

I'm into really crispy thin thin crust.
Pepperoni sliced so thin it only has 1 side and it gets crunchy on the edges when cooked.
There must be plenty of sauce but I'm picky about my sauce to cheese ratio.
Wood fired brick oven is best, but regular pizza oven is fine.

This looks like what I like.

A fairly thick, but crunchy Greek style pie with a lots of mozzarella and some mushrooms, onions, peppers and hamburg (though most meats will do) and cold beer.

Sausage and sauerkraut, red sauce and moz. It is amazing.


Had a pie in San Francisco, that was a deep dish sourdough(pretty awesome crust) it had redsauce and moz, chicken, onions, red peppers and green olives. Incredible. The olives were the best part.

As a Steelers fan, I am guessing you currently live near the Ohio Valley, or at least did at one time. The Ohio Valley style pizza does it right. After cooking "trays" of pizza without the cheese, they box it up and toss the cheese on before closing the lid. The hot pizza in the box cooks the cheese. This is unbelievably good if you have never tried it.
