Got a Brinkmann charcoal smoker for my birhtday a few days ago. Got it assembeled, have a rack of baby backs rubbed down in the fridge, and a turkey dethawing. My plan is to smoke the ribs and the turkey tomorrow afternoon. I had an electric smoker about twenty years ago, but I've never cooked with a charcoal smoker. Any tips are welcome.
