It's a galactic standard based of Coruscant, the capital. They also date stuff after the Battle of Yavin (which was the battle at the end of A New Hope) similar to how we do BC and AD. So you'll see dates like BBY (Before) and ABY (After). For a lot of details, you can read up on the wiki

Binged both seasons.
Loved the storytelling. Kind of had an X-Files vibe of a monster/bounty of the week episode and an overarching story to go along with it.
Casting was pretty top notch.
