I had never made this before, but it's amazing.

I cook it at 500 for 6.5 minutes per pound. Then turn off the heat, and let it sit in the oven on the lowest setting possible (for me, that's "warm") for an hour without opening the door. Let it sit for 5 minutes after taking it out of the oven to redistribute the juices.

It cooks it to exactly 145.

Sooooooo good.

Pork tenderloin is as good or better than beef tenderloin. I like it better cuz it's more diverse.


That bitch better be pink on the inside or there will be hell to pay.


I like a good marinade on that bitch and then grilled. Lime juice, garlic, honey, s&p and oil for an hour then grill. yum

Nothing like slow smoked tenderloin either.

Dry rub and cook it 225ish with a little pecan wood smoke and you have tender juicy heaven.

You want pink BD? Try a dark pink outer ring surrounding a perfectly cooked juicy interior.

As long as it's not overdone...I'm good. I have seen countless PT's that are a travesty. It's a TENDERLOIN. You wouldn't cook a beef tenderloin to medium-well or well-done. The same applies to a pork tenderloin.

As long as it's not overdone...I'm good. I have seen countless PT's that are a travesty. It's a TENDERLOIN. You wouldn't cook a beef tenderloin to medium-well or well-done. The same applies to a pork tenderloin.

Too many folks are afraid to eat pork that's still pink. I like mine medium rare.

from what i've found, loin filet is good for slower cooking.

for tenderloin (comes from a completely different part of the pig), high heat for a short period is better for getting the right texture.

the method i listed in my OP makes it perfect. slightly pink, but still up to safe temperature. if it gets above 150, the texture is gross.

Slow roasting pork loin is awesome when cooked perfectly. As far as tenderloin, I like to cut and sear medallions or pound it out and bread it for pork tenderloin sandwiches. Damn that sounds good right now!

1 Pork Tenderloin
1lb ground Pork
1lb ground beef
1/2 lb diced ham
1lb bacon
1 diced sweet onion

Mix the ground pork, beef, ham and onion. season as you wish, garlic thyme curry old bay whatever

Wrap loin in mixture, cover with bacon, bake for an hour @ 375-400.

OMFG...

It helps if you have a few friends over.
