I had never made this before, but it's amazing.
I cook it at 500 for 6.5 minutes per pound. Then turn off the heat, and let it sit in the oven on the lowest setting possible (for me, that's "warm") for an hour without opening the door. Let it sit for 5 minutes after taking it out of the oven to redistribute the juices.
It cooks it to exactly 145.
Sooooooo good.
