Alright - i'm on my third batch. Second one didn't turn out great - too salty and I didn't rinse it enough before smoking. I need tips. Good recipes? Do you dry cure or wet?

On a more serious note, is has never occurred to me to even try to cure bacon at home or buy it raw :noidea:

What?! Why, if you like to eat something, would you NOT consider making from scratch. Do you just drink lite beer from the Rockies? Do you grow vegetables in your backyard? Only eat ribs from Dickies? Never fired up a still and made bourbon? (ok, that's a bad idea...)
