Starting pitching clearly favors the Giants, bullpens seem to be about even statwise. Pitch limit is the probably number of pitches the starter will go before being relieved, +/- 5 pitches.

Should these stats be adjusted for changes over the course of a season, like Zito doing better in the first half, or Cain in the second? Is it useful to consider a pitcher 'hot' going into the playoffs? Zito's numbers are obviously skewed by his terrific April, for example.

No. They are what they are - season long ratings

Yes. When were considering match-ups right now, it's useful to know how they're pitching right now - that's Bochy's "going with the hot hand theory". But I bet you bochy throws that theory out the window with Zito, and puts madbum in the bulllpen and starts Zito in game 4 in ATL (assuming that Zito hasn't been hiding an injury in the second half).
