I made the most delicious pepperoni pizza hot pocket, but the power went out 30 seconds into cooking and I got pissed and dropped it on the floor because it was still frozen, kicked the damn thing under my sto... Oh, we're supposed to describe good food!

Quick and dirty bbq beef stir fry , doesn't look like @FaCe-LeE-uS stirfry
Looks good SP! My stir fry's are pretty simple... No noodles or rice.

My usual is...
*2 10-12oz chicken breasts (cubed or stripped),
*2 big bell peppers (red & green) cut into strips
*mushrooms (raw), sliced
*yellow onion, 2 cups diced
*baby corn (15oz can, drained)
*handful of cashews
*2 tbsp garlic
*salt, pepper, cayenne, chili powder

Sauce:
Usually buy pre-made since its easy & cheap. But I have tried this:
ginger, soy sauce, beef broth, cider vinegar, and brown sugar. Usually comes out really good if you get the portions right. I like it thick so that it clings to the food better.

If I get lazy about my veggies I will sometimes just take a handful out of a bag of mixed frozen vegetables (broccoli, carrots, water chestnuts, etc) and use that.

Got zucchini coming out my ears right now.

Made fettuccine last nite....long shreds of zuch sauteed in o/o and butter and a couple cloves garlic. Toasted pecans. Chopped basil. Asiago cheese.


Toss the cooked noodles and sauteed zuch and garlic. Add pecans, basil and cheese. Toss.

Delicious.


Followed that with a zucchini-lemon, poppy seed bread that was killer.

Made myself avacado-tuna salad for "power lunches" this week:

*2 cans of albacore tuna
*1 hass avocado (mash up prior to mixing with everything else)
*1/2 cup chopped celery
*1/2 cup chopped red onion
*minced garlic clove
*1/4 cup chopped, toasted walnuts
*1 tbsp pickle juice
*Dill, Cumin, Salt & Pepper
*1/2 tsp dijon mustard

Mix everything together really well and then serve it on WHATEVER you like! Sandwiches, wraps, burgers, omelets, crackers, etc! Its super healthy and very filling! Perfect for lunches. I like to triple the portions above so that it makes enough to last me throughout the work week. I keep it in a big tupperware container in the refrigerator and make sandwiches & wraps each morning before I go to work.

I'd recommend trying it if you like potatoes and a little kick. I called an audible an added some green onions to it because why not? Having a food processor helps tremendously with the prep though.

add some raisins, dried cranberries or dried cherries to this....!!!
