I used to live out there and have played all of those courses. They are certainly more forgiving than what they normally play. But they are nowhere near "that easy."
If you guys have never played in the valley (Palm Springs, Palm Desert, La Quinta, Rancho Mirage, etc...) - go and book a trip and do it now. I've never enjoyed playing golf so much in my life as when I was out there. Without exaggeration, out of hundreds of courses, you have to try really really hard to find a bad golf course. The weather 8-9 months per year is the best on the planet (just don't go in summer months). You get those mountain views basically everywhere you play. 90% of the courses on in top notch shape. Even a great amount of the muni's are designed by the likes of: Player, Palmer, Nicklaus, Dye, Fazio, etc...
