How early is too early for him? Do we need to wait until we get closer to the season? Is he a 3rd rounder at this point?

5-6 round would be the position I would start thinking about Gronk. At this point with the TE position being so deep I might just pass on him. TE is turning into the QB position in none superflex leagues. So many quality options you don't have to spend a 1st-3rd rounder on Graham or Gronk anymore. You can focus on the WR and RB position.
If you are not planning on looking to Gronk until the 5-6 round or you are going to wait on Graham until the third then you might as well take them off your board and look to other options at TE because you won't have a chance to draft them. Realistic shot at these guys will require at least an early 2nd round for Graham and a 3rd round for Gronk (same for Julius Thomas). It is fine strategy to wait for different TE if 2nd/3rd round is too high for you to take a TE.
The very next pick was Julius Thomas.

Uh..... What? After Graham there is a big drop off, then after gronk (if he stays healthy, he could be on Graham's tier) and Julius there is another big drop off. The rest of the tightends are wildly inconsistent. I agree with focussing on wr and rb, but your statement on TE becoming like QB in its depth is incredibly inaccurate.
Actually per week there isn't a huge difference between Grand and Graham, year to year.
