That is damn good, but I would probably still add some cheddar in there(just a bit), but that's just me :suds:

This one is similar, just different meat...

2 Bricks Velveeta
2 Cans Rotel (I use habanero)
1 lb Breakfast Sausage(whatever spiced version you desire) *or Chorizo links (diced)
2-3 Jalapenos (diced)

Simple, yet incredibly good & popular at any party.

*Don't mix the meats. Tried it once and its not as good.

I was doing a low carb thing during a game this year and made this,
cut up some fairly thick ham into inch and a half size pieces and put on a sheet pan,
then put a pepporoni or two on top the ham,, then a fresh jalapeno slice with seeds,
and top with a good pile of shredded cheddar cheese,
Bake at 350 about 10 minutes..
would be awesome on crackers too,, the jalapeno slice give it a good pop,
pickled jalapenos woud be a bit less pop if thats your thing.

1 lb ground beef
Pat of butter
1/2 large diced onion
1/2 large diced green pepper
4 cloves garlic
2 teaspoons yellow mustard
3/4 cup BBQ sauce or Ketchup
4 Tablespoons brown sugar
Teaspoon cayenne or crushed red pepper (I use a combo of both...)
salt and pepper to taste (I also add garlic and onion powders)

Then add velveeta mexican cheese. less for nacho's, more fore dip.

That one is usually a hit at my place on game day, though I use the breakfast sausage, or ground turkey is another winner
