first off, dont disrespect it by calling it chicken fried steak..

Now, I want to learn something, how to make it better,, and Im not talking about slow cooker cube steak in au jus here,, im talking battered and fried in cast iron.

do you: dredge in flour, submerse in egg wash, draw through the flour again, then fry..
skip the egg wash,,
freeze before you fry (?) only a few of you will understand that.
what type lean beef, Deer? sirloin? Tenderloin?

We always called it chicken fried steak because it's cooked in the same manner as fried chicken. And white gravy is a must.

Beans or no beans is fine. And BBQ is a method of cooking, not what you cook. You can BBQ most any kind of meat and some things that ain't meat.

When I lived in Dallas, a down home cooking place on Greenville had two for one chicken fried steak platters at lunchtime on Wednesdays. We will would always make sure we had an even number going to lunch that day and split them.
But, that place would just be PACKED with BIG OL BOYS with two platters in front of them and stuffing their faces like it was their last meal!!!!
Always got mine with mashed and green beans or corn.

I'm with you on that, except when it comes to CFS.
Have to have enough for the CFS itself, the roll or Texas Toast, maybe some okra dipping. Lots of shit going on up in there.
