Why haven't defenses tried this yet?

Let's say there's 10 seconds left to go in a game and you want to stop a team from gaining yardage to get into FG range...

As soon as the ball is hiked why not grab or tackle all eligible receivers. It eats time off the clock and only gives the offense 5 yards for defensive holding. Now the team driving down the field only has one play to go and has to go for the score.
