Going the Easy route with Chicken Thighs
I've had mine (Traeger) for 2 years. Love it. I haven't been brave enough to do a brisket yet but chicken thighs are amazing with it. As are breasts, boneless pork chops, ribs, turkey breast and pizza (homemade crust and all). I also will toss a ribeye in it and let it smoke for an hour before putting it on my grill to finish it. Completely different than plain old gas.

Did NY Strips a few days ago, no extra grilling needed. We have a large roast in the freezer I'm going to try some Prime Rib, hopefully I don't screw it up because they're expensive. Been reading all about brisket, it's an all day affair so I wait until it's a little warmer outside.

I bought the smaller PB850 Because it's just the wife and I who are meat eaters.

I kept looking for a pellet smoker but didn't want to pay the Traeger price. I saw a cheaper one at Sams, but this allows you to control the grill from your phone.

So far 5 STARS, but I'm still a rookie here.

I've been looking at Pit Boss quite a bit. Will either be the Austin XL or the 440, but have now heard some good things about ZGrills and Kenmore (apparently made by Traeger but sold by Sears).

I have had my Traeger for six years now and I love it. Yes they are expensive but remember that you get what you pay for. That being said, Green Mountain smokers do a good job and they are 200ish less compared to a Traeger with similar features.

One bit of advice, start with a "flat" brisket your first time or two. Full (also called a Packer) brisket is composed of two muscles (flat and point) and needs some trimming to get both parts to cook evenly. Smoking the flats will give you confidence to take the next step. :2cents:

Looks damn good, man. I’ve considered going with a flat to start but I’ve pretty much decided to just listen to Aaron Franklin and roll with a full one.

Looks great. I'm going to attempt one this summer. Probably for the 4th.
