This one from Inglorious Basterds is one of my all time favorites. Christoph Waltz one the Oscar on this very first scene.

IB, PF, RD... All CLASSIC opening scenes.

I would also put Saving Private Ryan as an all-time great. Talk about a good fisting to start a movie.

Indiana Jones had some good opening sequences in the trilogy (I do not recognize the 4th)
Jurassic park took everyone's attention with the dude getting eaten by a raptor.
Gladiator wasn't bad.
The 'fly over' in the first star wars.

The Godfather, of course, belongs up there. The guy with the daughter who got severely beaten describing what happened and the revenge he wants, all in one take, as the camera pans back over the course of a few minutes and reveals the Godfather himself sitting there listening is magical.

I think another to throw in is West Side Story since it packs such a clear narrative into a long opening scene with virtually no dialogue.
