Any of you make Smoked Mac and Cheese before?

I was looking at this and thinking this looks pretty good.

Yep.
I just substitute smoked cheese for the other cheeses I tend to use.
I've tried it with smoked cheddar, smoked mozzarella, and smoked gouda.
I've found mixing a sharp cheddar into the bechamel, then adding small cubes of smoked mozzarella after I combine the sauce with the pasta to be the version I prefer when I go that route.

I've had smoked Mac and Cheese from BBQ places that put the tray in the smoker for a bit (maybe to cook it?). Tastes pretty good.

I have put it in the Weber over charcoal and wood (demotherfuckinlicious), but I have not used smoked cheeses.

Using smoked cheese makes it really easy, plus you can make it any time without having to fire up a grill.
I also use smoked cheese in corn cakes I make.
In my experience, you have to be judicious about how much you use (in both the mac n cheese and the corn cakes), lest all you taste is smoke, but if you get the right balance, sooooooo good.

I put one of my wife's mac and cheese in an aluminum pan, then into the smoker with a meatloaf. Came out okay, but probably had a little too much smoke with the hickory. Will look to try a different wood and cut back on the time with the smoke next time. The meatloaf was awesome though.

Using smoked cheeses may be an easier way to zero in on the amount of smoker flavor your want.

Here's what I did....

I melted down the cheese in a sauce pan and threw it on the smoker for a couple of hours to give it some smokey flavor. Now I have the Mac and Chees in a foil container and threw that on the smoker with the panko and bacon topping. Now I'm going to smoke that for about an hour.
