man, this cold weather made me catch a craving for some good home made Chicken n Dumplings..

these are a lot easier to do than you might think,, just gotta follow the steps,, and don't cheat,, No store bought stock, or canned biscuits.

boil a whole chicken for 3 hours, Pour everything into a colander that is in a bigger bowl to catch the
stock, put stock back in pot, add in 2 carrots and 3 stalks of celery cut up small.. let that be simmering.

take the chicken off the bone and remove the skin. pinch into bite size pieces,, and set aside.

Make some biscuit dough out of self rising flour (2 cups), a little milk, salt n pepper to taste,, knead together and roll out to about 1/8" thick, cut into strips about 2 inches by 3 inches with a pizza cutter,,

bring the simmering stock back to a good boil.. add in the dumpling strips and then the cut up chicken. Turn the heat back down and let simmer for 10 to 15 minutes stirring occasionally,

remove from heat and put the lid on,, let it sit for about an hour if you can..

I really hope I just made somebody hungry :)

I just cook chicken breasts until done, save the broth. Shred the chicken, add back to broth, add 1/2 cup butter, salt, pepper.

Make the dumplings based on Bisquick recipe for dumplings, let them sit for a while in warm area to rise.

Heat chicken & broth up to just below boiling, roll the dumplings into round shapes, drop into boiling chicken, let any extra flour or dough fall in. After they "puff", flip them. Cook for a few more minutes, then enjoy.

Bisquick does produce some fine biscuit mix IMO

They do but you can use almost any biscuit type mix & get the same result.

Two things I've learned, always use fresh biscuit mix, not something that's been sitting in the pantry for a while.

Second, put the dumpling mix next to the stove & let it "rise" a little bit. It will make much lighter, fluffier dumplings.

You can also make your own biscuit mix for far less than the cost of ready made.

6 cups of all purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup of vegetable shortening (not oil, shortening)

Sift the dry ingredients, then cut in the shortening with a pastry cutter or can use a cuisinart w/pastry blender

Store in airtight container for up to 4 months. Refrigerator good for this.

Not clear on how she fucked them up but... the longer you cook the dumplings the more they disappear and fall apart.. once you put them in,, just simmer for 10 minutes and get them off the fire,, or else you wont have any dumplings!

Not clear on how she fucked them up but... the longer you cook the dumplings the more they disappear and fall apart.. once you put them in,, just simmer for 10 minutes and get them off the fire,, or else you wont have any dumplings!

The longer you cook the dumplings, the harder they can turn. I use drop method rather than rolling/cutting strips but get them fluffy by rising, then roll into a ball & drop into the boiling mass. Give them a few minutes to cook on one side, then carefully flip them to cook on the other. If you cook these too long, yes, they will disappear into a mass of dumpling gunk. It takes a bit of experience to know just when to flip them.

Flip too early, they'll be a mess. Flip too late, they are hard.

Our dumplings are always light & fluffy balls of goodness.

Made some tonight. I followed this recipe with a few modifications.

Mods:
Cut up a whole chicken (into a fryer more or less) and browned in the bottom of the dutch oven with a little butter. Removed and sauteed onion, celery and carrots until the onions were starting to turn translucent and removed. Added the chicken back with water and boiled and continued to following the above directions more or less.

This is the way I remember it. I've had it both ways and prefer somewhere in the middle. This was my first attempt but I will definitely play around with the drop dumplings too.

and my grandmother would tell you that "easy" is going to the store and buying a chicken instead of going into the back yard and lopping one's head off to cook that night...... and even she used frozen dumplings after awhile because the dough wasn't worth the extra effort.
