Hack that 25 lb bird into it's various body parts and give it all an overnight marinade in a salt water bath. On T-Day chuck the meat-n-bones into a large bathing vessel full of duck fat and poach to temp.

Turkey confit... bon appetite.

I don't even need turkey...I love the sides so much that's really all I crave...Stuffing, mashed potatoes, cranberry sauce, sweet potato casserole, rolls, etc...and of couse LOTS of gravy!!! :nod:

The only thing I get excited about eating on any holiday is cheesey potatoes. I'm pretty sure it is a very simple recipe that my aunt uses because like 10 other family members have made it on occasions where she couldn't, but I refuse to spoil the magic of it by learning how.

Honestly I really don't even care for turkey. At least not as a main dish. It's too bland to stand up to all the other big flavors. Turkey is reserved for sandwiches the other 363 ish days a year, I don't get why so many people get excited to eat it that one day.

The cheese onions are my grandmother's recipe. Basically homemade mac and cheese, minus the mac and replaced with pearl onions. It is freaking incredible.

I have a friend who loves onions. I need to make this for her.

My Grandmother always made the dressing. Now my dad does. And the two main ingredients seem to be sage and celery.

It's an awesome side dish. Kind of a pain in the ass cuz pearl onions are so small, but the recipe says you can use regular sweet onions, like Vidalias er what have you....I've always used the pearls cuz they're sweet and ...delicate, for lack of better words.

I usually have 2 types of vegetables on Thanksgiving: brussel sprouts and spinach or mustard greens or kale.

And a romaine/iceberg lettuce salad.
