WHITE HOUSE HONEY PORTER
Ingredients

2 (3.3 lb) cans light unhopped malt extract
3/4 lb Munich Malt (cracked)
1 lb crystal 20 malt (cracked)
6 oz black malt (cracked)
3 oz chocolate malt (cracked)
1 lb White House Honey
10 HBUs bittering hops
1/2 oz Hallertaur Aroma hops
1 pkg Nottingham dry yeast
3/4 cup corn sugar for bottling

WHITE HOUSE HONEY ALE​
Ingredients

2 (3.3 lb) cans light malt extract
1 lb light dried malt extract
12 oz crushed amber crystal malt
8 oz Bisquit Malt
1 lb White House Honey
1 1/2 oz Kent Goldings Hop Pellets
1 1/2 oz Fuggles Hop pellets
2 tsp gypsum
1 pkg Windsor dry ale yeast
3/4 cup corn sugar for priming

The honey ale does look good and may be the next beer I brew. Any idea for a Wyeast substitute rather than the dry yeast?

But I have huge reservations about these "recipes."

Well, the chefs aren't exactly homebrewers...more like a couple guys that got a kit and tried a couple recipes based on advice from asking around, right? Unless the recipes are crazy out of whack the end results probably taste okay...if for no other reason than the "it's mine" flavor bump...

I was going to say, I would be a little upset if he was spending any amount of time actually brewing.. he'd better have other priorities. Now drinking on the other hand, I can understand...

drinking is more time consuming than brewing, most homebrewers multi-task though (drinking while brewing :D)

My issues are "what is amber crystal malt," "when do you use the honey; in the boil or in the fermenter? Both are wrong, unless you pasteurize the honey before the boil," "when do you use the hop additions," and "what's the gypsum for (boil or mash)?"

Sorry. Kind of turned into a beer elitist lately. Here's a llama, though.
