I don't have a machine, I just used office clips and clipped the ziplocks to the side of the pot.

I have only done sous vide cooking to re-heat meat, specifically prime rib.

That's a pretty good idea. Warm it up without overcooking it. Great idea.

I'm not a sous vide freak, but I do think it allows you to do some unique things. It's not a be-all-end-all, but it's a pretty cool tool to have in the kitchen.

Not that I'd ever do it, but with sous vide, you can safely serve medium rare chicken.
