Pork Butt turned out ok, probably the worst one I've done so far. I tried cutting off the fat cap thinking I would get a better bark and that was a mistake. It was more dry and lacked the flavor previous ones did. Still good, but I did not live up to the standard. The rub was good, very similar to what I bought in store, I'll use it again.

This week Smoked Roast Beef is on the menu.

I've got a spaghetti squash to cook up tonight. No idea what needs to be done to make that taste good...
Make a cold asian noodle salad. The squash has a good amount of crunch and takes the asian flavors (soy, ginger, sesame, garlic, etc.) well. You could go vegetarian or add stir fried beef, pork or chicken.

Sounds good but I've never tried Elk.
Beef roast I've been putting in the smoker the past few years.
Was thinkin about doin somethin simple if nobody has anything I need to try.

Rub/Marinade:
S&P, Worcestershire, Soy, maybe a touch of brown sugar

Cooking method:
Pan sear the sides in skillet w/ olive oil then roast in the oven for 10-12 minutes.

Can't really go wrong with that.

Same here. But I used up the last of my liquid smoke on some duck breasts I marinated a week ago. :sigh:

How thick are the filets? 10-12 minutes sounds like a long time.

Just scored 2lbs of Elk Tenderloin from a friend... Anyone got any bomb go-to recipes I should try? I'd prefer to stay off the grill since its 20-30deg outside. Oven or slow cooker would be easier!

The plot has thickened... Just got done unthawing them and it turns out they are steaks! The "loins" rolled out into 6 different sized steaks. All roughly 1/2" - 1" thick.

Anybody got any good marinades or rubs? Probably goin with pan sear cooking

Cut up about 6 pounds of apples, practically filled my crock pot. They're currently cooking down into apple butter.

I don't know about elk steaks, but when I do ribeyes or ny strips in my cast iron, I only use fresh ground black pepper and kosher salt. That's it. It gives them a nice crust and a nice flavor without taking away from the meat itself.

I've had elk steaks before and this was the method used. Maybe a hint of Worcestershire but very small amount. It was awesome.

What oil do you use in the cast iron?

Just cook it like you'd cook a pork tenderloin. Stick it in a pan with a few tablespoons of water at the bottom of it, shake some salt & pepper over it, cover it in foil and cook @ 350F.
Not sure if you saw, but turns out they were steaks all rolled together.
